How to take care of your knife

Jens Ansø prefers a magnetic knife strip for storing his knives over a traditional block or drawer. Not only does a strip protect the knife, it also allows it to be an object of beauty in the kitchen.

Each knife comes with a wooden sheath, “Saya” in Japanese, to store and protect it. Should you prefer to keep your knife in the kitchen drawer please keep it within its sheath.

Never put the knife in the dish washer.
It should always be washed by hand and dried immediately afterwards.

If the wood begins to lose shine over time, you may consider treating the handle with a bit of oil (grapeseed or olive oil are preferred).
